Spinach and Tofu Stir-Fry with Sesame Seeds

Ingredients:
  • 1 bunch spinach, washed
  • 16 oz. tofu, diced small
  • 1 red bell pepper
  • ½ bunch parsley, finely chopped
  • 2 tbs sesame seeds
  • 1/6 cup amaranth
  • ½ cup water
  • ½ tbs sesame oil
  • 2 garlic cloves, minced
  • ½ tbs ginger, minced
  • 1 ½ tbs low sodium soy sauce

Instructions:

Total Time: 65 minutes (Prep Time: 35 minutes & Cook Time: 30 minutes); Servings 4 people

1. Place amaranth and water in a saucepan. Bring to a boil, then reduce to simmer, uncovered, until water is absorbed, for about 20 minutes. If it is too thick, add a small amount of water. Turn off heat and add soy sauce. Mix well.

2. Put tofu on a plate lined with a paper towel. Put another plate on top of tofu and weigh it down with something heavy. Press for 30 minutes to get rid of excess water.

3. Heat sesame oil in a skillet or wok over medium heat. Add garlic and ginger, cook for 1 minute or until fragrant. Add tofu and stir-fry until lightly colored. Add sesame seeds.

4. Chop spinach into 2 inch pieces and slice bell pepper into thin strips. Add bell pepper to 2 and stir-fry for 1 minute over medium-high heat, then add spinach and stir-fry for 30 seconds or until wilted.

5. Add 1 to 3 and mix well over medium heat. Turn off heat and add parsley. Mix well.
