Curried Carrot Soup with Roasted Sunflower Seeds
Ingredients:
- 1 lb carrots, peeled and finely diced
- 2 garlic cloves, minced
- 1 tbs extra virgin olive oil, cold pressed
- 1 medium onion, coarsely chopped
- 2 tbs parsley, minced
- 3 tbs roasted sunflower seeds
- 5 cups vegetable stock
- 2 tbs curry powder
- ½ tbs turmeric
- Salt and pepper to taste
Instructions:
Total Time: 45 minutes (Prep Time: 20 minutes & Cook Time: 25 minutes); Servings 4 people
1. Heat olive oil in a pot over medium heat. Add garlic and cook for 1 minute or until fragrant. Add carrots and onions. Sautee for 10 minutes.
2. Add vegetable stock, curry powder, and turmeric to 1. Bring to a boil, then reduce heat to simmer for 10 minutes or until the vegetables become very tender.
3. Using a blender, puree the soup in small batches. When fully pureed, put back to the pot and simmer over low heart. Add salt and pepper.
4. Turn off the heat and sprinkle with sunflower seeds and parsley. Serve while hot.
