Wilted Dandelion and Broccoli Salad

Ingredients:
  • 1 bunch dandelion greens, thoroughly washed
  • 2 medium heads of broccoli
  • 2 medium beets
  • 2 tbs fresh lemon juice
  • 2 garlic cloves, grated
  • 1 tbs extra virgin olive oil, cold pressed
  • ½ tbs turmeric
  • Salt and pepper to taste

Instructions:

Total Time: 15 minutes; Servings 4 people

1. Cut off the ends of dandelion greens and roughly chop into 1 inch pieces. Add salt, pepper, and lemon juice. Massage until reduced in volume, soft and tender.

2. Cut broccoli into bite-sized pieces and steam in a steamer, covered, for 4 to 5 minutes.

3. Peel skin of beets, cut in half, and slice into thin wedges.

4. Blend olive oil with garlic and turmeric.

5. Combine 1 through 4. Mix well.
